Couscous Salad With Grape Leaf Wrappers from the San Francisco Chronicle * 1 1/2 cups water * 1 teaspoon olive oil * 1/2 teaspoon salt * 1 cup dry couscous * 1/4 cup lemon juice * 3 tablespoons olive oil * 1/3 cup pine nuts, lightly toasted * 3/4 cup golden raisins * 3/4 cup crumbled feta cheese * 1/4 teaspoons cinnamon * Kosher salt and ground black pepper to taste * 4 ounces grape leaves, rinsed
1. In a medium saucepan, bring water, oil and salt to a boil. Stir in couscous and cover. Remove from heat and let stand for 5 minutes. Uncover and fluff with a fork. Let cool slightly. 2. In a bowl, combine couscous with lemon juice, olive oil, pine nuts, raisins, feta and cinnamon. Season to taste with salt and pepper. 3. Serve alongside a plate of grape leaves, and instruct guest to fill their own.
Serves 12-14 as an appetizer.
