White Bean Hummus with Spinach
15oz can white northern beans, drained and rinsed 1/4 cup olive oil Juice of 1 lemon 1 Tbsp tahini 1 clove garlic 1/3 cup spinach (packed), thinly sliced 1/2 tsp salt 1/8 tsp pepper Dash of cayenne
Add the beans, olive oil, lemon juice, tahini, and garlic to a small food processor. Puree until smooth.
Chop the spinach into thin strips. Add it to the food processor along with the salt, pepper, and cayenne. Puree until smooth.
Scrape the hummus out of the food processor and into a bowl. Cover with plastic wrap and let chill for 30 minutes. Hummus will keep for up to 3 days in the fridge.
