Middle Eastern Black-Eyed Pea Soup (Saudia Arabia) Adapted from "Hot and Spicy" by Marlena Spieler
1 Can Black Eyed Peas 1 Tablespoon Olive Oil 1 Medium Onion, finely chopped 4 Cloves Garlic, finely chopped 1 Medium Jalapeno, finely chopped 1 Teaspoon Cumin 1 Teaspoon Turmeric 1 Can Diced Tomatoes 2 Cups Chicken Broth 1/2 Cup Cilantro, finely chopped Juice of one Lemon
Heat oil in skillet. Add onion, garlic and jalapeno. Cook until onion is well browned. Add remaining ingredients except for lemon juice. Simmer for 30 minutes. Stir in lemon juice and serve.
Serves 4.
