Sesame Noodle Salad
Great picnic or pot-luck dish. Halving the recipe makes a perfect summer lunch or dinner for the family - with leftovers.
2 lbs. Chow Mein Noodles, cooked, drained and cooled 1 lb. Carrots, shredded 2 bunches Green Onions, thinly sliced 7 Tbs. Sesame Oil 5 Tbs. Soy Sauce 3 Tbs. Balsamic Vinegar 4 Tbs. Sugar 1-2 Tbs. Hot Chili Oil (1=mild, 1-1/2=medium, 2=spicy) 1/2 cup toasted Sesame Seeds 1/2 cup Cilantro leaves
In a large bowl, combine noodles, carrots and green onions. In a small bowl, whisk together sesame oil, soy sauce, vinegar, sugar and chili oil until smooth. Toss with the noodle mixture until well combined. Garnish with sesame seeds and cilantro and serve.
Serves 20.
