Tomatoes with Feta Cheese
2 pounds tomatoes 1 red onion 8 ounces feta cheese 3/4 cup ripe olives Fresh parsley, as needed Olive oil, as needed
Slice tomatoes and red onion. Layer tomatoes, red onion and feta cheese in a 13-by-9-inch dish. Slice and add ripe olives and parsley. Pour 1/4 cup olive oil over first layer. Repeat layering tomatoes, red onion, and feta cheese two more times for a total of 3 layers. Top with feta cheese and parsley. Refrigerate and serve.
Makes 10 servings.
