Turkish Cypriot Green Olive Spread Eat with thin slices of bread or toasts that have been spread with goat cheese.
1 cup green olives, pitted (about 1 1/2 cups with their stones), or 1/2 cup green olive paste 1 to 2 garlic cloves 1 teaspoon crushed coriander seed 1 1/2 tablespoons fresh lemon juice 2 tablespoons extra virgin olive oil
Whirl everything together in a food processor, or if using olive paste, simply stir together.
Yields about 3/4 cup
PER TABLESPOON: 30 calories, 0 protein, 0 carbohydrate, 3 g fat (0 saturated), 0 cholesterol, 114 mg sodium, 0 fiber.

whooooeee! I tried this out, yesterday, verbatim... EXCEPT...I made an adjustment or two...couldn't find any "unstuffed" green olives....included pimentos; soaked and rinsed about 4 times, to unload the salt. Added 1 T. Honey Blended with 8 oz. feta cheese (my mistake...feta cheese is cured in brine....makes it very salty!...Sorry!) I love this spread, very robust!... Good work...! (Do we dare add a T. or so of smoked fish?...salmon, tuna, halibut?) A drop of Tabasco, on serving? Thanks , Amani! ;D Take Care! Greg
