Chef Eddie's Mint Hummus and Pita Chips
Hummus with a twist from Eddie Matney's, as featured in The Arizona Republic on Sept. 12, 2001.
Mint Hummus 2 cups garbanzo beans 1 1/2 teaspoons salt 1 1/2 teaspoons garlic, minced 1 1/2 teaspoons cumin, ground 1 1/2 teaspoons fresh mint 1/3 cup lemon juice 1/2 cup water 1/3 cup tahini 1/4 cup olive oil
Place garbanzo beans, salt, garlic, cumin, mint, lemon juice, water, tahini and olive oil in a food processor. Blend until smooth (no lumps). Makes 3 cups, about 24 servings.
Pita Chips 6 pitas (8-inch diameter) Olive oil Sumac (found in Middle Eastern stores) Salt and pepper, to taste
Preheat oven to 350 degrees. Cut each pita into 8 triangles, as you would a pie. Lay the triangles on a cookie sheet. Brush with olive oil and sprinkle with sumac, salt and pepper. Bake at 350 degrees for 5 minutes or until golden brown. Let cool. Serve with Chef Eddie's Mint Hummus.
Makes about 24 servings.
Approximate values per serving (2 pita triangles with 2 tablespoons hummus): 148 calories, 6 g fat, 0 cholesterol, 5 g protein, 20 g carbohydrates, 3 g fiber, 218 mg sodium, 34 percent calories from fat.

Best hummus recipe I have found, so far!!! I learned something...I have always used canned chickpeas, due to the convenience, but I was never pleased with the end result, as the hummus was not as smooth as I desired, no matter how long I ran it in the processor... So, this time I cooked my own, in a pressure cooker: 1# dried chickpeas, clean, sort, rinse, as per instructions on bag. Cover with water, and boil 2 minutes; simmer about an hour. Make certain peas are covered with water; cook for 30 minutes, 15 psi pressure. Cool quickly, under water. The peas are much softer, and have a better flavor! (I almost forgot: anytime I cook dried peas/beans, regardless of the recipe, I always use 4-5 bay leaves, and a generous grinding of fresh black pepper! The bean flavor remains unique, but seems more complete... I hope you find this helpful. Greg
