Shwarma spice mix
1 tb ground cumin 1 tb ground coriander 1 tb garlic powder 1/2 tb paprika 1 tsp turmeric 1/2 tsp ground cloves 1/2 tsp ground cayenne pepper 1 tsp ground black pepper 1/2 tsp ground cinnamon
Mix all together and keep stored in an airtight container. They mix them from whole spices that they grind themselves, and some will put them in the oven at 180 celcius which I think is 200 farenheit? basically a med hot oven for about a couple minutes to no more than 5.
To use, cut either chicken, beef or lamb into strips, add about 1 tbs olive oil, and a bit of lemon juice. Add 1-2 tsp of the spice per pound of meat and toss to coat well. Let it sit overnight then cook. You can fry it or bake it. Usually they put this on a folded over piece of flat bread (theirs has no pocket), and they add some pickled turnip cucumber mix with tahini sauce and diced tomatoes. Sounds odd but it's actually pretty good.
